Honey Glazed Roasted Cauliflower

Ingredients:

  • 2 heads cauliflower, cut into florets 

  • 2 shallots, minced 

  • 2 tablespoons dijon mustard 

  • 2 tablespoons extra virgin olive oil 

  • 2 tablespoons apple cider vinegar or lemon juice 

  • 1 tablespoon honey

  • 1 clove garlic, grated or minced

  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400 degrees. 

  2. Bring a large pot of water to a boil. Heavily salt the water and add the cauliflower.

  3. Boil cauliflower until tender, 5-7 minutes. Drain cauliflower and add cauliflower to a bowl. 

  4. In a bowl, combine the shallots, mustard, olive oil, apple cider vinegar/lemon juice, honey, garlic, salt and pepper. Whisk until well combined. 

  5. Add dressing to the cauliflower and fully coat. 

  6. Cover a sheet pan with aluminum foil and drizzle with olive oil. Put dressed cauliflower onto a sheet tray and bake in the preheated oven for 20-25 minutes. 

  7. Serve immediately or at room temperature.
