Honey Glazed Roasted Cauliflower
Ingredients:
2 heads cauliflower, cut into florets
2 shallots, minced
2 tablespoons dijon mustard
2 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar or lemon juice
1 tablespoon honey
1 clove garlic, grated or minced
Salt and pepper to taste
Instructions:
Preheat the oven to 400 degrees.
Bring a large pot of water to a boil. Heavily salt the water and add the cauliflower.
Boil cauliflower until tender, 5-7 minutes. Drain cauliflower and add cauliflower to a bowl.
In a bowl, combine the shallots, mustard, olive oil, apple cider vinegar/lemon juice, honey, garlic, salt and pepper. Whisk until well combined.
Add dressing to the cauliflower and fully coat.
Cover a sheet pan with aluminum foil and drizzle with olive oil. Put dressed cauliflower onto a sheet tray and bake in the preheated oven for 20-25 minutes.
Serve immediately or at room temperature.
